214 oz. cans of chickpeas, drained (reserve 2 tbsp liquid)
1/4cuptahini
5-6tbspfresh squeezed lemon juice
1 1/2tspsalt, preferabley kosher
1tbspmaple syrup
2tbspharissa paste (you can adjust this quantity if this is too spicy for you)
2tbspchickpea liquid (or water)
1/4cupolive oil (this can be optional)
Instructions
Place all of the ingredients into a blender and process until smooth. Depending on the consistency you prefer, you can add more olive oil and/or chickpea liquid. Refrigerate and serve chilled. Will stay fresh in the refrigerator for up to 3 days.
